Working Principle:

The working principle of a kitchen fume purifier generally involves an internal electric field under the influence of a high external static voltage. As gas containing oil and grease particles passes through, the electric field causes ionization of these particles. Under the action of the cathode and anode plates, negative and positive ions move toward their respective plates and become adsorbed, thereby achieving separation and purification. It is evident from this explanation that both the electric field and the high-voltage power supply are crucial to the device's purification performance—indeed, they directly determine its effectiveness.

Electric Field and Power Supply Materials:

Let’s first examine the electric field. In the kitchen fume purifier industry, three materials are commonly used in manufacturing electric fields: stainless steel, aluminum alloy, and galvanized steel. In terms of purification performance, the ranking is stainless steel > aluminum alloy > galvanized steel, which also corresponds to their cost order. Although stainless steel delivers the best performance, most manufacturers opt for aluminum alloy, which offers comparable results at a more reasonable price. After all, high-quality fume purifiers naturally come with a higher price tag. Galvanized steel, on the other hand, performs the worst and is less desirable. .

The power supply in a kitchen fume purifier functions like a "heart"—if it fails, even the highest-quality electric field materials will be ineffective. During operation, various issues may arise, but most importantly, a high-quality power supply ensures constant voltage and current, maintaining consistent purification efficiency.

Purification Standards:

There is a clear national standard for fume treatment in the catering industry: the "Emission Standard for Fumes from Catering Services (GB18483-2001)." According to the 2001 "Emission Standard for Fumes from Catering Services," the maximum allowable fume concentration was set at 2.0 mg/m³. However, due to the rapid growth of the food service industry, this standard has become outdated. Therefore, starting this year, many regions have begun implementing a new, stricter threshold of 1.0 mg/m³. For a fume purifier to be considered effective, the residual fume concentration in the treated exhaust gas must fall below 1.0 mg/m³. This defines what constitutes a "high-performance" fume purifier.
